Lately I have been trying to step up my donut game, because well, who doesn't want to be able to make donuts whenever they like? But since my roommate is gluten free, I decided to try a vegan gluten free recipe to avoid having to eat an entire batch by myself.
Oh She Glows has a great power donut recipe using oat flour and chia seeds, it tastes great and actually has some nutrients you wouldn't otherwise get with the typical donut. You can find the full recipe here. The only thing I changed was the oat flour, I couldn't find this in store so I went with a generic gluten free flour blend instead. I highly recommend this cook book for other vegan desserts as well! I have tried a few and they have all turned out pretty great.
Now, these donuts remain healthy if you eliminate any added topping but how much fun is that? They just looked too plain in my opinion so I took the liberty of spicing them up a touch with a brown butter cinnamon glaze.
This recipe only makes 6 donuts (pretty perfect for a quick snack) so you just need:
- A tablespoon of butter or margarine
- One cup of icing sugar
- 1/4 tsp of Cinnamon
- 1 tbsp. of vanilla
- 1 tbsp. of water or milk (I used water to keep it vegan)
- 1 tbsp of maple syrup
Adjust ingredients according to thickness and taste - you may need a bit more water or a bit more icing sugar. To brown your butter, turn your heat to medium high and watch it closely until it browns, you can tell it's getting there when it becomes a light caramel color. Keep an eye on it as it won't take long for it to burn after this. Reduce your heat and add in additional ingredients.
Glaze your donuts a once they cool a touch, and enjoy while everything is still warm! So yummy! The added spice is great for fall, and you feel only a little guilty eating these bad boys.
