Peppermint Marshmallows


Happy one week until Christmas! I honestly can't wait, I love this time of year, I just wish it lasted longer and wasn't clouded by the constant stress and anxiety people often feel during the holidays. I wanted to eliminate that stress for myself this year so my goal was to keep things simple especially when it came to gift giving.

Part of my plan was to give away something home made. I bake on the regular anyways so it was a good excuse to try something new and different. Like marshmallows! Who doesn't love marshmallows?

They're actually super easy to make and you have a lot of choices when it comes to decorating. Once they set you can wrap them into little plastic baggies, tie a bow on it and there you go. Gift giving done. 

I used a recipe from the Duchess Bake shop cook book (highly recommend as a Christmas gift to anyone who loves baking!) but if you don't have it there are a ton of recipes scouring Pinterest so you won't have any trouble finding one that works for you.

If you do opt for Duchess. All you need is white corn syrup, granulated sugar, gelatin (superstore has the orange packs) some icing sugar to coat or if you want to get creative, coconut, candy canes and chocolate powder work great to coat your mallows as well.

I wasn't sure how intense the recipe was going to be but it was actually pretty simple, my only suggestion would be to make your mallows ahead of time because they take 6 hours to set or more. And coat everything you're using with some oil because things will get sticky!


I made a coconut version as well but the candy cane coating works great if you're giving these as Christmas gifts. Especially if you pair them with hot chocolate, sooooo yummy.


Another option is to just give these babies to yourself for Christmas. Nothing wrong with that in my books!
